Instructions

  1. Whisk flour, baking powder, sugar, and salt in a large bowl.
  2. In another bowl, whisk egg, milk, melted butter, and vanilla extract (if using).
  3. Pour wet mixture into dry ingredients and stir gently until combined (small lumps are fine).
  4. Heat a nonstick pan or griddle over medium heat and lightly butter the surface.
  5. Pour ¼ cup batter per pancake onto the pan.
  6. Cook until bubbles form and edges set (about 2 minutes), then flip and cook the other side for 1-2 minutes until golden brown.
  7. Serve warm with butter, syrup, or fresh fruit.
