  • 1 tablespoon tomato paste
  • 1 ½ tablespoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ cup water
  • 2 cups shredded cheese (Monterey jack, pepper jack, or Mexican blend)
  • 4 large whole wheat tortillas
  • Oil, butter, or nonstick spray for cooking
  • Optional toppings: sour cream, guacamole, salsa, cilantro

Instructions

  1. Heat oil in skillet over medium-high heat. Cook ground beef for 2 minutes before breaking into pieces.
  2. Add tomato paste and spices. Cook 5-7 minutes until beef is browned.
  3. Stir in water and scrape pan. Remove from heat.
  4. Assemble quesadillas with cheese, beef, and more cheese between tortillas.
  5. Cook in buttered skillet 4 minutes per side until golden and crisp.
  6. Let cool briefly before slicing into wedges.
