- 1½ cups all-purpose flour
- ¾ cup cold butter, cubed
- ¼ cup powdered sugar
- 3 large eggs, lightly beaten
- 2 cups white sugar
- ½ cup all-purpose flour
- ½ tsp salt
- 4 cups rhubarb, diced
Instructions
- Preheat oven to 350°F.
- Combine flour and powdered sugar in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Press crumbs into a greased 9×13 inch baking pan.
- Bake crust for 10-12 minutes until lightly browned.
- Mix eggs, sugar, flour, and salt in a bowl.
- Stir in diced rhubarb gently.
- Pour filling over hot crust.
- Reduce oven to 325°F and bake for 30-35 minutes until set.
- Cool for 30 minutes, then refrigerate before cutting.
Notes
- No need to peel fresh rhubarb.
- Frozen rhubarb works if thawed and drained.
- Runny bars need longer baking time.
- Add lemon zest for extra tartness.
