Ingredients

  • ½ tsp salt
  • 4 cups rhubarb, diced

Instructions

  1. Preheat oven to 350°F.
  2. Combine flour and powdered sugar in a bowl.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Press crumbs into a greased 9×13 inch baking pan.
  5. Bake crust for 10-12 minutes until lightly browned.
  6. Mix eggs, sugar, flour, and salt in a bowl.
  7. Stir in diced rhubarb gently.
  8. Pour filling over hot crust.
  9. Reduce oven to 325°F and bake for 30-35 minutes until set.
  10. Cool for 30 minutes, then refrigerate before cutting.
