A quick and flavorful one-pot meal combining ground beef, rice, and Mexican-inspired ingredients.

Ingredients

  • 1 lb lean ground beef
  • ½ medium onion diced
  • 3 tbsp taco seasoning
  • ½ cup prepared salsa
  • 15 oz can black beans (drained and rinsed)
  • 15 oz can sweet corn (undrained)
  • 10 oz can diced tomatoes and green chiles
  • 8.5 oz bag Ready Rice (cooked)
  • 4 oz Colby Jack cheese shredded
  • optional garnishes: fresh cilantro, sliced avocado, sour cream, crushed tortilla chips

Instructions

  1. Heat skillet over medium heat and spray with oil.
  2. Cook ground beef and onions for 8-10 minutes.
  3. Preheat oven to Broil.
  4. Add taco seasoning and salsa to beef mixture.
  5. Add beans, corn, and tomatoes. Simmer 5-6 minutes.
  6. Stir in cooked rice and top with cheese.
  7. Broil until cheese is bubbly (about 1 minute). Garnish and serve.

Notes

  • Use any salsa except thick/chunky varieties
  • Watch carefully while broiling
