Ingredients

- 1 lb lean ground beef
- ½ medium onion diced
- 3 tbsp taco seasoning
- ½ cup prepared salsa
- 15 oz can black beans (drained and rinsed)
- 15 oz can sweet corn (undrained)
- 10 oz can diced tomatoes and green chiles
- 8.5 oz bag Ready Rice (cooked)
- 4 oz Colby Jack cheese shredded
- optional garnishes: fresh cilantro, sliced avocado, sour cream, crushed tortilla chips
Instructions
- Heat skillet over medium heat and spray with oil.
- Cook ground beef and onions for 8-10 minutes.
- Preheat oven to Broil.
- Add taco seasoning and salsa to beef mixture.
- Add beans, corn, and tomatoes. Simmer 5-6 minutes.
- Stir in cooked rice and top with cheese.
- Broil until cheese is bubbly (about 1 minute). Garnish and serve.
Notes
- Use any salsa except thick/chunky varieties
- Watch carefully while broiling
- Ready Rice saves cooking time
