Ingredients

- 1 pound yellow summer squash, chopped
- 1/4 cup water
- 1/4 cup chopped onion
- 1/2 teaspoon salt
- 1 large egg, beaten
- 1/4 cup dry bread crumbs
- 2 tablespoons butter, melted
- 1/8 teaspoon pepper
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°.
- In a saucepan, combine the squash, water, onion, and salt. Bring to a boil.
- Reduce heat, cover, and simmer until squash is tender, 15-20 minutes. Remove from heat and cool.
- Stir in the egg, bread crumbs, butter, and pepper.
- Transfer to a greased 1-qt. baking dish and sprinkle with cheese.
- Bake, uncovered, until heated through and the cheese is melted, 30 minutes.
Notes
- Use fresh summer squash for best results.
- You can substitute bread crumbs with crushed crackers if preferred.
- Adjust salt and pepper to taste.
