- 2 lbs. boneless skinless chicken thighs (trim off excess fat if desired)
- 1 oz. packet ranch seasoning mix
- 16 oz. cream cheese
- 8 slices bacon (sliced, cooked, and drained)
- 1 cups shredded cheddar cheese
- cup sliced green onions
Instructions
- Add the chicken thighs to the slow cooker.
- Sprinkle the ranch seasoning mix over the chicken.
- Place the cream cheese on top of the chicken.
- Cover and cook on LOW for 7 hours without opening the lid.
- Shred the chicken in the slow cooker using two forks.
- Stir the cooked cream cheese into the shredded chicken and mix in the bacon.
- Spread the mixture evenly and sprinkle the cheddar cheese on top.
- Cover and let sit for 10 more minutes to melt the cheese.
- Serve over rice, baked potatoes, or sandwich rolls.
- Garnish with sliced green onions.
Notes
- You can use chicken breasts instead of thighs if preferred.
- If the mixture is too watery, cook uncovered for the last 30 minutes.
- Serve as a main dish with sides or as a sandwich filling.
- If you don’t have ranch packets, use a homemade ranch seasoning mix.
