  • 4 slices Bacon (crispy, turkey bacon, or omit)
  • 1 medium Onion (caramelized or shallots for milder taste)
  • 2 tablespoons Herbs (fresh thyme and chives or dried herbs)
  • Salt, pepper, and optional garlic powder to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out puff pastry on a floured surface, cutting into 4×6-inch rectangles.
  3. Mix eggs, cheese, bacon, onion, and seasonings in a bowl.
  4. Spoon filling onto one half of each pastry rectangle, leaving a border.
  5. Fold the other half over and crimp edges with a fork.
  6. Brush tops with egg wash (1 egg whisked with water).
  7. Bake 18-22 minutes until golden brown.
  8. Cool 5 minutes before serving.
