- 4 slices Bacon (crispy, turkey bacon, or omit)
- 1 medium Onion (caramelized or shallots for milder taste)
- 2 tablespoons Herbs (fresh thyme and chives or dried herbs)
- Salt, pepper, and optional garlic powder to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry on a floured surface, cutting into 4×6-inch rectangles.
- Mix eggs, cheese, bacon, onion, and seasonings in a bowl.
- Spoon filling onto one half of each pastry rectangle, leaving a border.
- Fold the other half over and crimp edges with a fork.
- Brush tops with egg wash (1 egg whisked with water).
- Bake 18-22 minutes until golden brown.
- Cool 5 minutes before serving.
