A hearty and comforting casserole made with rotisserie chicken, cream of chicken soup, and stovetop stuffing mix.

Ingredients

  • For the chicken layer:
    • Mrs. Dash onion and herb seasoning (to taste)
    • 2 cups shredded chicken (from a rotisserie chicken)
    • Nonstick cooking spray
    • Pepper (to taste)
    • Salt (to taste)
  • For the soup mixture:
    • 2 cans cream of chicken soup
    • 1/4 cup milk
  • For the stuffing:
    • 1 package stovetop stuffing mix
    • Aluminum foil

Instructions

  1. Preheat your oven to 350°F (175°C). Coat a 13×9 glass baking dish with nonstick cooking spray.
  2. Place 2 cups of shredded chicken evenly in the baking dish. Season with pepper, salt, and Mrs. Dash onion and herb seasoning.
  3. Prepare the stovetop stuffing mix according to package instructions. Microwave for 5-6 minutes and let it steam.
  4. Mix 2 cans of cream of chicken soup with 1/4 cup milk. Pour over the chicken layer and spread evenly.
  5. Top with the prepared stuffing mix. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes.
  6. Let the casserole cool for 5-10 minutes before serving.

  • Serve with steamed vegetables or a fresh salad.
