1 stick unsalted butter, melted

1 cup 2% milk

2 eggs

1/2 cup canned pumpkin puree

1 tsp pure vanilla extract

1/2 cup brown sugar

2 cups all-purpose flour

1/2 cup old fashioned oats

2 tsp baking soda

1 tsp pumpkin pie spice

For the topping: 1/4 cup unsalted butter, softened

1/3 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup old fashioned oats

1 tsp ground cinnamon or pumpkin pie spice

For the drizzle: 1/2 cup powdered sugar

1 tbsp milk

Instructions

1. Preheat oven to 400℉ and line muffin pan with liners.

2. In a large bowl, whisk butter, milk, eggs, pumpkin puree, vanilla, and brown sugar until smooth.

3. Add flour, oats, baking soda, and pumpkin pie spice; stir gently until combined.

4. Scoop batter into muffin liners.

5. Prepare topping by mixing butter, flour, sugar, oats, and cinnamon; sprinkle over muffins.

6. Bake for 12–15 minutes until golden; cool slightly.

7. Mix powdered sugar and milk; drizzle over cooled muffins.

8. Serve and enjoy!

Notes

Store at room temperature for 3 days, refrigerate for 1 week, or freeze up to 3 months.
