1/2 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened

1 egg yolk, room temp
1 tsp vanilla extract
1/3 cup pumpkin puree (blotted)
1 1/2 cups old-fashioned oats
Instructions
1. Whisk dry ingredients in a bowl.
2. Cream butter and sugars until combined.
3. Mix in egg yolk, vanilla, and pumpkin puree.
4. Gradually add dry mix, then oats.
5. Chill dough for 30 minutes.
6. Preheat oven to 350°F, line baking sheets.
7. Scoop dough, flatten slightly, and bake 9–12 minutes.
8. Cool on sheets before transferring to rack.
Notes
Chill dough to prevent spreading.
Blot pumpkin puree to avoid flat cookies.
Add-ins like chocolate chips, nuts, or cranberries for variety.
