- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 1/2 pounds ground beef
- 3 cloves garlic, minced
- 1 jalapeno, seeded and chopped
- 1 (18 ounce) can tomato sauce
- 1/2 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (12 ounce) package extra-wide egg noodles
- 1 (8 ounce) package cream cheese, softened
- 8 ounces sour cream
- 8 ounces Cheddar cheese, shredded
- 4 ounces mozzarella cheese, shredded
- 1 tablespoon chopped parsley, or as needed
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion and cook until softened, about 3 minutes.
- Add ground beef, garlic, and jalapeno. Cook, crumbling the beef, until browned, about 5 minutes.
- Stir in the tomato sauce. Add water to the empty can to release residual sauce and pour it into the pan with salt and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
- While the sauce cooks, bring a large pot of salted water to a boil. Cook the noodles until just tender, then drain.
- Return the drained noodles to the pot. Stir in the softened cream cheese and sour cream until combined.
- Preheat your oven to 350 degrees F (180 degrees C). Lightly grease a 9×13-inch baking dish.
- Spread 1/2 cup of the meat sauce into the bottom of the dish.
- Add half of the noodle mixture. Top with half of the remaining tomato sauce mixture.
- Sprinkle with half of the Cheddar cheese, then half of the mozzarella cheese.
- Repeat the layers with the remaining ingredients.
- Bake in the preheated oven for about 30 minutes, until browned, bubbly, and heated through.
- Sprinkle with parsley before serving.
Notes
- You can adjust the jalapeno to control the spice level.
- Let the bake rest for 5-10 minutes after removing it from the oven for easier serving.
- Substitute ground turkey or a meat alternative for the beef if preferred.
