Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 1/2 pounds ground beef
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and chopped
  • 1 (18 ounce) can tomato sauce
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (12 ounce) package extra-wide egg noodles
  • 1 (8 ounce) package cream cheese, softened
  • 8 ounces sour cream
  • 8 ounces Cheddar cheese, shredded
  • 4 ounces mozzarella cheese, shredded
  • 1 tablespoon chopped parsley, or as needed

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add onion and cook until softened, about 3 minutes.
  2. Add ground beef, garlic, and jalapeno. Cook, crumbling the beef, until browned, about 5 minutes.
  3. Stir in the tomato sauce. Add water to the empty can to release residual sauce and pour it into the pan with salt and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  4. While the sauce cooks, bring a large pot of salted water to a boil. Cook the noodles until just tender, then drain.
  5. Return the drained noodles to the pot. Stir in the softened cream cheese and sour cream until combined.
  6. Preheat your oven to 350 degrees F (180 degrees C). Lightly grease a 9×13-inch baking dish.
  7. Spread 1/2 cup of the meat sauce into the bottom of the dish.
  8. Add half of the noodle mixture. Top with half of the remaining tomato sauce mixture.
  9. Sprinkle with half of the Cheddar cheese, then half of the mozzarella cheese.
  10. Repeat the layers with the remaining ingredients.
  11. Bake in the preheated oven for about 30 minutes, until browned, bubbly, and heated through.
  12. Sprinkle with parsley before serving.

Notes

  • You can adjust the jalapeno to control the spice level.
  • Let the bake rest for 5-10 minutes after removing it from the oven for easier serving.
  • Substitute ground turkey or a meat alternative for the beef if preferred.
