Ingredients

  • 2 cups old fashioned oats
  • 1/2 cup whole wheat flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp brown sugar (optional)
  • 12 oz evaporated skim milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups sliced peaches

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine flour, oats, cinnamon, salt, and sugar in one bowl.
  3. Slowly mix in the milk, butter, and vanilla until combined. Fold in the peaches.
  4. Liberally spray the inside of an 8-inch by 8-inch baking pan with cooking spray. Pour batter into pan.
  5. Bake for 30 minutes or until toothpick comes out clean. Serve warm with a dollop of whipped cream, yogurt, or desired topping.

Notes

  • Use fresh or frozen peaches for best results.
  • Adjust sweetness by adding more or less brown sugar.
  • Store leftovers in the refrigerator for up to 3 days.
