- 1½ lbs boneless, skinless chicken breasts, diced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp Italian seasoning, divided
- ½ tsp onion powder
- Salt and pepper, to taste
- 2½ cups chicken broth
- 1 cup uncooked long-grain white rice
- ¾ cup heavy cream
- ⅓ cup grated Parmesan cheese
Instructions
- Dice the chicken and season with 1 tsp Italian seasoning.
- Heat olive oil in a skillet, cook chicken until browned, then set aside.
- Sauté garlic, add broth and rice, then simmer covered for 15-20 minutes.
- Stir in cream, Parmesan, cooked chicken, and remaining seasoning.
- Adjust salt and pepper, then serve hot.
Notes
- Store leftovers in the fridge for up to 3 days.
- For more flavor, add vegetables like peas or carrots.
- Ensure rice is fully cooked before adding cream.
