Brownies:

1 1/3 cup White granulated sugar

2 Large eggs

1 Egg yolk

5 TBSP Unsalted butter

1/3 cup Oil (canola or vegetable)

1 tsp Pure vanilla extract

1/2 cup All-purpose flour

3/4 cup Unsweetened cocoa powder, Dutch process

1 TBSP Cornstarch

1/4 tsp Salt

1/2 cup Semi-sweet chocolate chips

1/2 cup Milk chocolate chips

Monster Cookie Dough:

1/2 cup All-purpose flour

1 tsp Cornstarch

1/2 tsp Baking soda

1/8 tsp Baking powder

1/4 tsp Salt

1/4 cup Unsalted butter, room temperature

1/3 cup Brown sugar, packed

1/8 cup White granulated sugar

1/4 cup Creamy peanut butter

1 tsp Pure vanilla extract

1 Large egg, room temperature

1/2 cup Quick oats

1/2 cup Mini chocolate chips

1/2 cup Mini M&Ms

Instructions

1. In a medium bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt for the cookie dough.

2. Beat butter, brown sugar, and white sugar until light and fluffy. Add peanut butter and mix again.

3. Add vanilla and egg; mix until combined.

4. Stir in dry ingredients, then oats, M&Ms, and chocolate chips. Chill dough 40 minutes.

5. Preheat oven to 325°F. Grease and line a 9×9 pan with parchment.

6. Whisk flour, cocoa, cornstarch, and salt for the brownies.

7. Beat sugar, eggs, and yolk on high for 5 minutes until light and fluffy.

8. Mix in melted butter, oil, and vanilla.

9. Fold in dry ingredients gently, then stir in both types of chocolate chips.

10. Spread brownie batter into prepared pan. Bake 15 minutes.

11. Top partially baked brownies with cookie dough discs.

12. Bake another 20 minutes, cover loosely with foil, and bake 5–10 more until set.

13. Cool completely before slicing and serving.

Notes

High altitude baking: Add 1/2 TBSP flour to both the brownie batter and cookie dough.

Flour: Spoon and level flour or use a scale. Too much flour will dry out the brownies.
