Ingredients

  • 1 tbsp olive oil
  • 1 small red onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, chopped
  • 2 cups baby spinach or kale
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • Juice of 1/2 lemon
  • Optional toppings: crumbled feta, olives, parsley, tahini drizzle

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook for 2–3 minutes until softened.
  3. Stir in garlic, ground beef, oregano, cumin, salt, and pepper. Cook until browned and crumbled, about 6–8 minutes.
  4. Add bell pepper and zucchini. Sauté for another 5–6 minutes until veggies are tender.
  5. Stir in spinach and cook just until wilted.
  6. Finish with a squeeze of lemon juice for brightness.
  7. Top with feta, olives, or tahini if using. Serve warm!
