- 1 lb ground beef (lean or grass-fed preferred)
- 1 tbsp olive oil
- 1 small red onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, chopped
- 2 cups baby spinach or kale
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- Juice of 1/2 lemon
- Optional toppings: crumbled feta, olives, parsley, tahini drizzle
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook for 2–3 minutes until softened.
- Stir in garlic, ground beef, oregano, cumin, salt, and pepper. Cook until browned and crumbled, about 6–8 minutes.
- Add bell pepper and zucchini. Sauté for another 5–6 minutes until veggies are tender.
- Stir in spinach and cook just until wilted.
- Finish with a squeeze of lemon juice for brightness.
- Top with feta, olives, or tahini if using. Serve warm!
