Ingredients

  • 3 Tbsp crumbled feta cheese
  • Handful of pitted olives
  • Black pepper to taste
  • 1/2 scallion, chopped thinly

  • 1 tsp olive oil

Instructions

  1. Whisk eggs in a mixing bowl
  2. Add feta cheese, bell pepper, scallion, olives and black pepper
  3. Heat pan at medium high and add olive oil
  4. Pour in egg mixture and cook for 2 minutes without stirring
  5. Scramble eggs and cook for additional 3 minutes
  6. Serve immediately
