Ingredients

- 2 eggs
- 3 Tbsp crumbled feta cheese
- Handful of pitted olives
- Black pepper to taste
- 1/2 scallion, chopped thinly
- 1/2 bell pepper, chopped thinly
- 1 tsp olive oil
Instructions
- Whisk eggs in a mixing bowl
- Add feta cheese, bell pepper, scallion, olives and black pepper
- Heat pan at medium high and add olive oil
- Pour in egg mixture and cook for 2 minutes without stirring
- Scramble eggs and cook for additional 3 minutes
- Serve immediately
