A quick and easy low-carb cheeseburger skillet made with zucchini, ground beef, and cheese.

Ingredients

  • 23 large zucchini
  • 1 lb ground beef
  • 1/2 cup (56g) shredded cheddar cheese (or your choice of cheese)
  • Your favorite burger seasoning, seasoned to taste

Instructions

  1. Cube and cook the zucchini. Air fryer: 400°F for 20-25 minutes. Oven: 450°F for 15-20 minutes. Stovetop: Skillet over medium-high for 12-15 minutes.
  2. Season and brown the ground beef in a large skillet. Optional: add an onion.
  3. Add the cooked zucchini, ground beef, and cheese to an oven-safe skillet. Broil or heat on the stovetop with a cover until the cheese is fully melted.
  4. Top with your regular burger condiments or anything you’d like.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in a skillet or microwave until warmed through.
  • Meal prep by cooking zucchini and beef separately, then combine when ready to eat.
