- 2–3 large zucchini
- 1 lb ground beef
- 1/2 cup (56g) shredded cheddar cheese (or your choice of cheese)
- Your favorite burger seasoning, seasoned to taste
Instructions
- Cube and cook the zucchini. Air fryer: 400°F for 20-25 minutes. Oven: 450°F for 15-20 minutes. Stovetop: Skillet over medium-high for 12-15 minutes.
- Season and brown the ground beef in a large skillet. Optional: add an onion.
- Add the cooked zucchini, ground beef, and cheese to an oven-safe skillet. Broil or heat on the stovetop with a cover until the cheese is fully melted.
- Top with your regular burger condiments or anything you’d like.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in a skillet or microwave until warmed through.
- Meal prep by cooking zucchini and beef separately, then combine when ready to eat.
