- 1 pound ground beef or turkey, browned and drained
- 1 small onion, diced
- 1/2 head of cabbage, chopped into medium chunks (roughly 3 cups)
- 1 (10 ounce) can tomatoes with green chilies (undrained)
- 1 (8 ounce) can tomato sauce
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or colby jack recommended)
Instructions
- Brown your beef or turkey over medium heat in a large skillet and drain off any grease.
- Add the diced onion and sauté for 3-5 minutes.
- Add the chopped cabbage, tomatoes with green chili, tomato sauce, and spices. Stir well.
- Cover and reduce heat to medium. Cook for 15-18 minutes, stirring occasionally.
- When the cabbage reaches your desired tenderness, top with cheese and remove from heat. Place the lid on the skillet and let the cheese melt for about 2 minutes.
Notes
- Cabbage is good for weight loss as it is low in calories and high in fiber.
- You can use red cabbage if preferred.
- Cabbage noodles are low carb.
- Store leftovers in an airtight container for up to 3 days.
