Ingredients

- 200 g (7 oz) Pasta
- 220 g (8 oz) Tuna, Drained
- 520 g (1.1 lb) Sweetcorn, Drained (x2 tins)
- 1 Cucumber, Chopped into small chunks
- 2 Red peppers, Deseeded and chopped into cubes
- Sea salt and freshly ground black pepper, Season to taste
- For the dressing:
- 4 tbsp Mayonnaise
- 4 tbsp Creme fraiche
- 2 tsp Dijon mustard
- 1 Lemon, Juice only
- 15 g (1 tbsp) Fresh chives, Finely chopped
Instructions
- Cook the pasta according to the pack instructions.
- While the pasta cooks, mix all dressing ingredients in a bowl until smooth.
- Drain the cooked pasta and rinse it with cold water.
- In a large bowl, combine the pasta, tuna, sweetcorn, cucumber, and red peppers.
- Pour the dressing over the mixture and toss everything together until well coated.
- Season with sea salt and freshly ground black pepper to taste before serving.
Notes
- You can eat this dish cold, making it ideal for a packed lunch.
- For a healthier version, use light mayonnaise or Greek yogurt instead of creme fraiche.
- Prepare it ahead and store it in the fridge for a quick meal.
