- 2 lbs thinly sliced ribeye or sirloin beef
- 2 green bell peppers, sliced into strips
- 1 red bell pepper, sliced into strips
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1/2 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 8 slices provolone cheese (or shredded mozzarella)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Slice beef, peppers, and onions into thin strips. Mince garlic.
- Place sliced onions and peppers at the bottom of the crock pot, followed by the beef. Sprinkle in garlic, salt, pepper, paprika, and Italian seasoning.
- Pour beef broth and Worcestershire sauce over the mixture.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until beef is tender.
- Turn off the heat and layer provolone slices on top. Cover and let melt for 5–10 minutes.
- Spoon into bowls, lettuce wraps, or over cauliflower rice. Garnish with parsley if desired.

- Use thinly sliced beef for best results.
- Adjust seasoning to taste.
