  • 2 lbs thinly sliced ribeye or sirloin beef
  • 2 green bell peppers, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 8 slices provolone cheese (or shredded mozzarella)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Slice beef, peppers, and onions into thin strips. Mince garlic.
  2. Place sliced onions and peppers at the bottom of the crock pot, followed by the beef. Sprinkle in garlic, salt, pepper, paprika, and Italian seasoning.
  3. Pour beef broth and Worcestershire sauce over the mixture.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until beef is tender.
  5. Turn off the heat and layer provolone slices on top. Cover and let melt for 5–10 minutes.
  6. Spoon into bowls, lettuce wraps, or over cauliflower rice. Garnish with parsley if desired.
