Ingredients

- 1/3 cup Chopped Walnuts
- 1/2 cup Chopped Pecans
- 1/3 cup Swerve Confectioner’s Sugar Substitute
- 1/2 cup Bake Believe Semi-Sweet Chocolate Chips
- 1/2 cup Unsweetened Coconut Flakes
- 3 tbsp Coconut Oil melted
- 3 Egg Yolks
- 4 tbsp Butter melted
- 1/2 tsp Vanilla Extract
- 1/4 tsp Ground Cinnamon
Instructions
- Add the egg yolks, oil and butter to a mixing bowl, and blend until well combined.
- Mix in the remaining ingredients, and stir well to combine.
- Chill the batter in the fridge for 1 hour until set.
- Preheat the oven to 350 degrees.
- Drop the batter by the spoonful onto a parchment lined baking sheet, and form into a cookie shape.
- Bake for 10 minutes.
- Allow to cool completely before serving.
Notes
- Store in an airtight container for up to 5 days.
- For extra crunch, toast the nuts before adding them to the batter.
- Check the cookies at 8 minutes to avoid over-baking.
