Ingredients

  • ½ cup celery, chopped
  • ½ cup chopped mixed peppers
  • ½ onion, diced
  • 1 tsp garlic powder
  • ¾ tsp paprika powder
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme
  • Salt and pepper, to taste
  • ¼ cup chicken stock
  • 12oz. riced cauliflower

Instructions

  1. Gather all ingredients.
  2. Heat olive oil in a skillet.
  3. Add ground beef and cook until browned.
  4. Reduce heat to medium.
  5. Add onion, bell peppers, herbs, and spices.
  6. Cook while stirring for 5 minutes.
  7. Pour in chicken stock to deglaze the pan.
  8. Add cauliflower rice and stir well.
  9. Cook until cauliflower is tender.
  10. Serve warm.
