- 1 lb sausage (Italian or chicken sausage)
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Peel and cube the sweet potatoes.
- Heat olive oil in a skillet over medium heat. Cook sausage until browned (5–7 minutes).
- Add sweet potatoes and cook for 5 minutes to soften.
- Whisk honey, garlic, soy sauce, paprika, salt, and pepper in a bowl.
- Pour sauce over sausage and sweet potatoes. Stir well.
- Cover and simmer for 10 minutes. Garnish with parsley before serving.
Notes
- Substitute sausage with turkey or plant-based alternatives.
- Swap sweet potatoes with butternut squash or regular potatoes.
- Use maple syrup instead of honey for a vegan version.
