- 1 tbsp fine sea salt
- 2 lb small red potatoes (unpeeled, cut into 1-inch pieces)
- ground black pepper to taste
- 2 tbsp lemon juice
- 1/3 cup green onions (thinly sliced)
- 2 tbsp fresh parsley for garnish
- 2 tsp dijon mustard
- 2 tbsp green onions for garnish (sliced thin)
- 2 garlic cloves (minced)
- 1/4 cup olive oil
- 1/3 cup fresh parsley (finely chopped)
- 3 celery stalks (diced small)
Instructions
- Cook the potatoes in salted water until tender. Reserve 1/4 cup cooking water, drain, and transfer to a bowl.
- Blend olive oil, parsley, green onions, lemon juice, mustard, garlic, and pepper. Add reserved water and mix.
- Pour dressing over warm potatoes and gently mix. Let rest for 10 minutes, tossing occasionally.
- Add celery, extra parsley, and green onions. Toss well and adjust seasoning.
- Serve immediately or refrigerate for up to 3 days.
Notes
- Use small red potatoes for best texture.
- Fresh herbs work better than dried.
- Peeling potatoes is optional.
- Best enjoyed within a few hours.
