  • 1 cup whole wheat flour
  • 2 teaspoons ground cinnamon

  • 1 ½ cups milk (unsweetened vanilla almond or any kind)
  • 3 tablespoons honey (adjust for sweetness)
  • 2 tablespoons peanut butter (creamy or crunchy)
  • ½ cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 medium banana (quartered and diced)

Instructions

  1. Preheat oven to 375°F. Lightly coat an 8×8 inch square pan with cooking spray.
  2. In a medium bowl, stir together oats, whole wheat flour, cinnamon, baking powder, and salt.
  3. In a separate large bowl, combine milk, applesauce, egg, honey, peanut butter, and vanilla.
  4. Pour dry ingredients into the wet mixture and stir to combine. The batter will be very wet.
  5. Fold in diced banana, then pour into the prepared baking pan.
  6. Bake for 35 minutes or until thickened and golden. A toothpick inserted should come out clean.
  7. Cool, cut into bars, and serve.
