A healthy twist on the classic Caesar salad, this creamy pasta salad combines romaine lettuce, short pasta, boiled eggs, and homemade dressing for a nutritious meal.

Ingredients

  • 11oz / 300g short pasta (fusilli)
  • 4 cups chopped romaine lettuce
  • 2 boiled eggs
  • ⅓ cup grated parmesan cheese
  • 2 handfuls croutons (homemade or store-bought)
  • 2 tablespoons extra virgin olive oil
  • Healthy Caesar Dressing:
  • 1 cup plain Greek yogurt (non-fat)
  • 1 tablespoon Dijon mustard
  • 12 garlic cloves
  • 2 teaspoons capers (including some brine)
  • ⅓ cup grated parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Boil the pasta in salted water, drain, and reserve some pasta water.
  2. Transfer pasta to a bowl, add olive oil and 2 tablespoons of cooking water. Stir and let cool.
  3. Boil eggs for 10 minutes and let cool.
  4. Blend dressing ingredients with 1 tablespoon water until smooth. Adjust thickness with more water if needed.
  5. Wash, dry, and chop romaine lettuce into bite-sized pieces.
  6. Mix half the dressing with cooled pasta.
  7. Add lettuce, grated parmesan, and chopped eggs. Pour remaining dressing and toss.
  8. Sprinkle croutons on top and serve.

Notes

  • Use non-fat Greek yogurt for a lighter dressing.
  • Homemade croutons add extra crunch.
  • Adjust garlic and lemon juice to taste.
