- 1 packet (2 tablespoons) taco seasoning
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup crushed tortilla chips
- 1 1/2 cups shredded cheddar cheese
Instructions
- Preheat oven to 400°F (200°C).
- Brown ground beef and onion in a skillet over medium-high heat for 5-6 minutes. Drain excess fat.
- Add taco seasoning and stir until meat is coated.
- Mix in black beans, corn, and salsa until combined.
- Transfer mixture to a 2-quart baking dish.
- Top with crushed tortilla chips and shredded cheese.
- Bake for 10-15 minutes until cheese melts and casserole is bubbly.
Notes
- For a crispier topping, add tortilla chips in the last 5 minutes of baking.
- Substitute ground turkey for lower fat content.
- Use vegetarian refried beans instead of ground beef for a meatless version.
