A hearty and flavorful ground beef taco casserole that’s quick to prepare and perfect for weeknight dinners.

  • Total Time: 30 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 onion, finely chopped
  • 1 packet (2 tablespoons) taco seasoning
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 cup crushed tortilla chips
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brown ground beef and onion in a skillet over medium-high heat for 5-6 minutes. Drain excess fat.
  3. Add taco seasoning and stir until meat is coated.
  4. Mix in black beans, corn, and salsa until combined.
  5. Transfer mixture to a 2-quart baking dish.
  6. Top with crushed tortilla chips and shredded cheese.
  7. Bake for 10-15 minutes until cheese melts and casserole is bubbly.

Notes

  • For a crispier topping, add tortilla chips in the last 5 minutes of baking.
  • Substitute ground turkey for lower fat content.
  • Use vegetarian refried beans instead of ground beef for a meatless version.
  • Let casserole rest 5 minutes before serving for easier portioning.
