Ingredients

  • 1 pound ground beef
  • 8 oz green beans, trimmed and cut in half
  • 1/4 tsp red pepper flakes (more or less to taste)
  • 2 tsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp canola oil (or other neutral oil with high smoke point)
  • 1/4 cup low sodium soy sauce
  • 4 cloves garlic, finely minced or grated
  • 1 tablespoon sesame oil
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger root, grated
  • 1 teaspoon chili garlic sauce
  • 1 tbsp cornstarch

Instructions

  1. Whisk together all marinade ingredients in a bowl.
  2. Place ground beef in a medium bowl, pour marinade over it, and stir to combine. Let sit for 20 minutes.
  3. Heat oil in a sauté pan over medium-high heat. Cook green beans for 3-4 minutes until starting to blister.
  4. Add ginger, garlic, and red pepper flakes. Cook 30-60 seconds until fragrant. Remove from pan and set aside.
  5. Add marinated beef to the pan. Cook until browned.
  6. Return green beans to the pan. Stir to combine.
  7. Cook until excess moisture evaporates.

  • For tender-crisp green beans, avoid overcooking.
  • Frozen green beans can be used if fresh aren’t available.
  • Cook ground beef until fully browned for best texture.
  • Cornstarch in the marinade helps thicken the sauce.
