- 2 tablespoons Vegetable oil
- 4 cups Potatoes – cubed
- 1 Green pepper – diced
- 1 small Onion – finely diced
- 1 pound Ground beef
- 6 Eggs – beaten
- Salt and pepper to taste
- 1 teaspoon Red pepper – crushed
Instructions
- Wash, peel, and dice potatoes into small cubes.
- Cut the onion and green pepper into small pieces.
- Heat the oil over medium heat in a cast-iron skillet.
- Add potatoes, pepper, and onion to the skillet and cook for 8 minutes until the onions and pepper begin to soften, stirring occasionally.
- Increase to medium-high heat and add the ground beef, stirring and cooking until the beef is cooked through and the potatoes start to brown.
- Whisk the eggs and pour them on top of the ground beef and potatoes. Allow them to set slightly, then gently fold them into the mixture until they’re cooked.
- Remove from the skillet and serve.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in a skillet or microwave before serving.
