A hearty and flavorful breakfast dish made with ground beef, potatoes, and eggs.

Ingredients

  • 2 tablespoons Vegetable oil
  • 4 cups Potatoes – cubed
  • 1 Green pepper – diced
  • 1 small Onion – finely diced
  • 1 pound Ground beef
  • 6 Eggs – beaten
  • Salt and pepper to taste
  • 1 teaspoon Red pepper – crushed

Instructions

  1. Wash, peel, and dice potatoes into small cubes.
  2. Cut the onion and green pepper into small pieces.
  3. Heat the oil over medium heat in a cast-iron skillet.
  4. Add potatoes, pepper, and onion to the skillet and cook for 8 minutes until the onions and pepper begin to soften, stirring occasionally.
  5. Increase to medium-high heat and add the ground beef, stirring and cooking until the beef is cooked through and the potatoes start to brown.
  6. Whisk the eggs and pour them on top of the ground beef and potatoes. Allow them to set slightly, then gently fold them into the mixture until they’re cooked.
  7. Remove from the skillet and serve.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in a skillet or microwave before serving.
