A hearty and flavorful skillet dish combining ground beef and potatoes with spices and cheese.

Ingredients

  • 2 tablespoons avocado oil
  • 1 pound potatoes cut into 1/2 inch cubes
  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • Kosher salt and freshly ground black pepper to taste, approximately 1 – 1 1/2 teaspoons kosher salt
  • 4 ounces diced green chiles
  • 2 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 cup cilantro chopped
  • 1/2 cup shredded cheese

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Swirl to coat the skillet and reduce heat to medium.
  2. Add potatoes and cook for 6 minutes, stirring often, until golden and slightly tender.
  3. Push potatoes to one side and add ground beef, onion, and red bell pepper. Season with salt and pepper.
  4. Break the beef apart as it cooks.
  5. Add green chiles, spices, and cilantro. Stir and cook for 6-8 minutes until potatoes are tender and beef is cooked.
  6. Taste for seasoning and add more salt if needed.
  7. Top with cheese and cook for 1 minute until melted.
  8. Garnish with cilantro if desired and serve hot.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in a skillet or microwave before serving.
