  • 2 eggs, or 2 flax eggs
  • 2/3 cup granulated erythritol or regular sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Grease an 8-inch pan or line it with parchment paper.
  3. Mix all ingredients well in a bowl.
  4. Spread the batter evenly into the pan.
  5. Smooth the top using a second sheet of parchment if needed.
  6. Bake for 20 minutes on the center rack.
  7. Let cool completely—they will firm up as they cool.
  8. For best texture, refrigerate loosely covered overnight.
