Ingredients

  • 1/2 pound lean ground beef (90% lean)
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 4-ounce can fire-roasted green chiles (spicy or mild)
  • 3 tablespoons chili powder
  • 14-ounce can crushed tomatoes
  • 14-ounce can chili beans (or kidney beans), rinsed and drained
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Chili toppings: sour cream, cheddar, cilantro, chips, etc.

Instructions

  1. In a small stockpot, add beef and diced onion. Cook over medium-high heat, stirring until beef is fully browned.
  2. Add garlic, green chiles, and chili powder. Stir for 1 minute.
  3. Pour in crushed tomatoes and beans. Mix well.
  4. Season with salt and pepper. Bring to a simmer.
  5. Cover and simmer for 20 minutes to 1 hour.
  6. Taste and adjust seasoning if needed.
  7. Serve with toppings.

Notes

  • Use lean beef for less grease.
  • Adjust spice level with mild or hot green chiles.
  • Simmer longer for deeper flavor.
