- 1/2 pound lean ground beef (90% lean)
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 4-ounce can fire-roasted green chiles (spicy or mild)
- 3 tablespoons chili powder
- 14-ounce can crushed tomatoes
- 14-ounce can chili beans (or kidney beans), rinsed and drained
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Chili toppings: sour cream, cheddar, cilantro, chips, etc.
Instructions
- In a small stockpot, add beef and diced onion. Cook over medium-high heat, stirring until beef is fully browned.
- Add garlic, green chiles, and chili powder. Stir for 1 minute.
- Pour in crushed tomatoes and beans. Mix well.
- Season with salt and pepper. Bring to a simmer.
- Cover and simmer for 20 minutes to 1 hour.
- Taste and adjust seasoning if needed.
- Serve with toppings.
Notes
- Use lean beef for less grease.
- Adjust spice level with mild or hot green chiles.
- Simmer longer for deeper flavor.
