Ingredients

  • 8 ounces whole-wheat macaroni
  • ½ cup mayonnaise
  • 1 teaspoon Dijon mustard

  • ¼ teaspoon cracked black pepper

  • 1 medium green bell pepper, finely chopped
  • ½ cup corn kernels, thawed if frozen
  • ½ medium red onion, finely chopped

Instructions

  1. Bring a medium pot of water to boil.
  2. Add macaroni and cook following the package directions.
  3. Drain the cooked macaroni.
  4. Rinse the macaroni with cold water.
  5. Mix mayonnaise, mustard, salt, and pepper in a large bowl.
  6. Add the cooled macaroni, carrot, bell pepper, corn, and onion to the bowl.
  7. Stir all ingredients together until evenly coated.
