- 1 pound 90/10 ground beef
- 1/2 medium onion, finely chopped
- 2 tablespoons taco seasoning
- 2 tablespoons tomato paste
- 1/4 cup water or beef broth, as needed
- salt to taste, as needed
- 8 (6 inch) taco size flour tortillas
- 2 to 3 cups mozzarella cheese, shredded
- avocado or vegetable oil
- fresh cilantro, finely chopped, garnish
Instructions
- Heat 1 tablespoon oil in a large skillet over medium heat. Add onions and cook until softened, 2-3 minutes.
- Add beef. Break up the beef and cook until mostly browned, 4-5 minutes.
- Mix in tomato paste and taco seasoning. Stir in water or broth if dry. Cook until beef is fully done and liquid evaporates, 3-4 minutes. Season with salt if needed. Remove from heat and cool slightly.
- Place a tortilla on a clean surface. Add 1 1/2 to 2 tablespoons cheese on the top half. Spoon beef filling and top with more cheese. Fold the bottom half over and press to seal.
- Transfer assembled taco to a baking sheet. Repeat for remaining tortillas.
- Heat 3-4 tablespoons oil in a skillet over medium heat. Pan fry tacos in batches, 1 minute per side, until golden brown. Transfer to a wire rack.
- Garnish with cilantro and serve hot with your favorite sauce.
