Ingredients
4 strips bacon – cooked, chopped
1/2 large yellow onion – diced
2 ribs celery – finely diced
5 ears corn – cut off from the cob
4 cloves garlic – minced
5 cups chicken broth – low sodium
2 russet potatoes – peeled and cubed
1 1/4 tsp kosher salt
1/2 tsp ground black pepper
1/2 tsp paprika
1/2 tsp dried parsley
1/4 tsp thyme
1/8 tsp cayenne pepper
1 large zucchini – quartered and sliced
1 large yellow squash – quartered and sliced
2 cups half and half or whole milk
Instructions
1. Cook bacon in Dutch oven until crisp.
2. Add onion and celery, sauté 3 minutes.
3. Add corn, cook 4 minutes, then garlic for 1 minute.
4. Pour in broth, add potatoes, spices, and simmer 10 minutes.
5. Add zucchini and squash, cook 10–12 minutes until tender.
6. Puree 2 cups of chowder and return to pot.
7. Stir in half and half, remove from heat.
8. Let rest 10 minutes before serving.
Notes
Serve with crusty bread or salad. Refrigerate leftovers up to 4 days. Avoid freezing as texture changes.
