A hearty and easy-to-make breakfast casserole featuring shredded hash browns, eggs, cheese, and sausage.

Ingredients

  • 1 package (30 oz) frozen shredded hash browns, thawed
  • 2 cups cheddar cheese (shredded)
  • 8 eggs (room temperature)
  • 1 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1 lb pork sausage (Jimmy Dean recommended)
  • 1 tsp black pepper
  • 1 1/2 cups whole milk or heavy cream

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9 x 13-inch baking dish.
  2. Cook sausage in a skillet over medium heat, breaking into small pieces. Drain excess grease.
  3. Whisk eggs, milk or cream, salt, pepper, and garlic powder in a bowl until smooth.
  4. Layer hash browns, sausage, cheese, then pour egg mixture over top.
  5. Cover with foil and bake for 40 minutes. Remove foil and bake 20 minutes more until set.
  6. Let rest 5 minutes before slicing. Serve warm.

Notes

  • Thaw hash browns before using for best texture.
  • Fresh potatoes can replace frozen hash browns if grated and squeezed dry.
  • Sausage must be cooked first to remove excess grease.
  • Sour cream can be substituted with Greek yogurt or cream cheese.
