Ingredients

  • 2 lb. pork tenderloin
  • 1 (1-oz.) envelope taco seasoning mix
  • 2 Tbsp. lime juice
  • ¼ cup snipped fresh cilantro
  • 8 (8- to 10-inch) flour tortillas
  • Desired toppers, such as salsa, avocado slices, fresh cilantro, and/or lime wedges (optional)

Instructions

  1. Place pork in a 3- to 4-quart slow cooker.
  2. Sprinkle the taco seasoning over pork.
  3. Pour lime juice and ½ cup water over pork.
  4. Cover and cook on low for 6 to 7 hours.
  5. Transfer pork to a cutting board and shred using two forks.
  6. Return shredded meat and cilantro to cooker and stir to combine with cooking liquid.
  7. Serve meat in flour tortillas with desired toppers.

Notes

  • Check pork for doneness—it should shred easily with a fork.
