Ingredients
1 pound boneless skinless chicken breasts
1 teaspoon olive oil
Salt and black pepper to taste
1/2 teaspoon garlic powder
1/4 cup celery, diced
1/2 cup red onion, diced
1/2 cup grapes, halved
1/2 cup apple, diced
1/4 cup dried cranberries
1/4 cup almonds, chopped
1/3 cup plain Greek yogurt
2 Tablespoons mayonnaise
1 teaspoon lemon juice
1 head Boston Bibb lettuce or Romaine
Instructions
1. Heat olive oil in a pan, chop and season chicken, cook until done.
2. Mix celery, onion, grapes, apple, cranberries, and almonds in a large bowl.
3. Whisk Greek yogurt, mayonnaise, and lemon juice in a small bowl.
4. Toss chicken and mix-ins with dressing, season to taste.
5. Wash and dry lettuce leaves.
6. Spoon chicken salad into lettuce leaves and serve.
Notes
Best served fresh. Store chicken salad separately from lettuce leaves to prevent sogginess.
