- 4 tablespoons butter, melted
- 4 cups shredded chicken (rotisserie or other)
- 1 box cheddar bay biscuit mix (11.36 ounce)
- 2 cups milk
- 12 ounces frozen mixed vegetables
- 1 cup chicken broth
- 1 can cream of chicken soup
Instructions
- Preheat oven to 400°F.
- Spread melted butter over the bottom of a 9×13 casserole dish.
- Place chicken and frozen vegetables evenly over the butter.
- Whisk biscuit mix and milk together (lumps are fine). Pour over chicken and veggies. Do not mix.
- Whisk cream of chicken soup and chicken broth. Pour over casserole. Do not mix.
- Bake 40-50 minutes until sides bubble and top browns.
- Let sit 5 minutes before serving.
Notes
- Use rotisserie chicken for easy prep.
- Do not stir after layering ingredients.
- Let cobbler rest before serving for best texture.
