A comforting chicken cobbler with a biscuit topping.

Ingredients

  • 4 tablespoons butter, melted
  • 4 cups shredded chicken (rotisserie or other)
  • 1 box cheddar bay biscuit mix (11.36 ounce)
  • 2 cups milk
  • 12 ounces frozen mixed vegetables
  • 1 cup chicken broth
  • 1 can cream of chicken soup

Instructions

  1. Preheat oven to 400°F.
  2. Spread melted butter over the bottom of a 9×13 casserole dish.
  3. Place chicken and frozen vegetables evenly over the butter.
  4. Whisk biscuit mix and milk together (lumps are fine). Pour over chicken and veggies. Do not mix.
  5. Whisk cream of chicken soup and chicken broth. Pour over casserole. Do not mix.
  6. Bake 40-50 minutes until sides bubble and top browns.
  7. Let sit 5 minutes before serving.

Notes

  • Use rotisserie chicken for easy prep.
  • Do not stir after layering ingredients.
  • Let cobbler rest before serving for best texture.
