Ingredients

  • ¾ pound ground beef
  • ⅓ cup diced onion
  • 1 clove garlic, minced
  • 1 (10 ounce) can diced tomatoes and green chiles
  • 1 (8 ounce) can tomato sauce
  • 1 cup long-grain white rice
  • 1 cup water
  • 1 (1.25 ounce) package taco seasoning
  • 1 sheet aluminum foil
  • ½ (8 ounce) package grated sharp Cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 7×11-inch casserole dish with cooking spray.
  2. Cook ground beef in a skillet over medium heat for 5 minutes. Add onion and garlic and cook for 5 more minutes.
  3. Mix in diced tomatoes, tomato sauce, rice, water, and taco seasoning. Stir well.
  4. Transfer mixture to the casserole dish and cover with foil.
  5. Bake for 30 minutes, then remove foil and sprinkle cheese on top.
  6. Bake uncovered for 15 more minutes until cheese is golden brown.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • You can prepare the casserole ahead and bake it later.
  • Use a strainer for tomatoes to prevent excess moisture.
  • Top with sour cream, avocado, or jalapeños if desired.
