- 1 lb boneless, skinless chicken thighs (or breasts)
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 small yellow onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 cup long grain white rice, uncooked
- 2 cups low-sodium chicken broth
- 1 tsp Cajun seasoning
- ¼ tsp smoked paprika (optional)
- Chopped parsley or green onions for garnish
- Lemon wedges (optional)
Instructions
- Season chicken with Cajun seasoning, salt, and pepper.
- Sear chicken in olive oil for 4-5 minutes per side. Remove and set aside.
- Sauté onion and bell peppers for 4-5 minutes. Add garlic and cook 30 seconds.
- Toast rice in skillet for 1 minute.
- Add broth, Cajun seasoning, and smoked paprika (if using). Stir.
- Return chicken to skillet. Simmer covered for 20-25 minutes.
- Let rest 5 minutes. Fluff rice, garnish, and serve with lemon wedges.

- Adjust salt and spice levels to taste.
- Use chicken breasts for a leaner option.
- Store leftovers in airtight container for up to 3 days.
