- 1 1/2 pounds 90% lean ground beef
- 1 small yellow onion, chopped
- 1 cup Thousand Island dressing, plus more for drizzling
- 10 ounces American cheese, shredded
- 1 teaspoon yellow mustard
- 3/4 teaspoon kosher salt, divided
- 1/2 cup crinkle-cut dill pickle chips, patted dry and chopped, plus more whole chips for garnish
- 1 (16 ounce) package frozen tater tots
- 2 teaspoons toasted sesame seeds
- 1/2 cup chopped iceberg lettuce
Instructions
- Gather all ingredients. Preheat your oven to 375 degrees F (190 degrees C).
- Cook the beef and chopped onion in a 12-inch cast iron skillet over medium heat. Stir often until the beef is fully cooked and the onion is soft, about 6 to 8 minutes. Remove from heat and let it cool for about 15 minutes.
- Add the Thousand Island dressing, shredded American cheese, yellow mustard, and 1/2 teaspoon of salt to the beef mixture. Stir until everything is well combined.
- Spread this mixture evenly across the bottom of the skillet.
- Sprinkle the chopped pickles evenly over the beef layer.
- Arrange the frozen tater tots in a single layer over the beef and pickles. Sprinkle the top evenly with the toasted sesame seeds and the remaining 1/4 teaspoon of salt.
- Bake in the preheated oven for 30 to21535 minutes, or until the tater tots are crisp and the casserole is hot and bubbly.
- Remove from the oven. Top evenly with the chopped iceberg lettuce, drizzle with extra Thousand Island dressing, and garnish with additional whole pickle chips. Serve hot.
Notes
- You can store leftovers in an airtight container in the refrigerator for up to 3 days.
- This casserole pairs well with a simple side salad or steamed vegetables.
- For a crispier top, place the skillet under the broiler for the last 1-2 minutes of baking.
