  • 1 1/2 pounds 90% lean ground beef
  • 1 small yellow onion, chopped
  • 1 cup Thousand Island dressing, plus more for drizzling
  • 10 ounces American cheese, shredded
  • 1 teaspoon yellow mustard
  • 3/4 teaspoon kosher salt, divided
  • 1/2 cup crinkle-cut dill pickle chips, patted dry and chopped, plus more whole chips for garnish
  • 1 (16 ounce) package frozen tater tots
  • 2 teaspoons toasted sesame seeds
  • 1/2 cup chopped iceberg lettuce

Instructions

  1. Gather all ingredients. Preheat your oven to 375 degrees F (190 degrees C).
  2. Cook the beef and chopped onion in a 12-inch cast iron skillet over medium heat. Stir often until the beef is fully cooked and the onion is soft, about 6 to 8 minutes. Remove from heat and let it cool for about 15 minutes.
  3. Add the Thousand Island dressing, shredded American cheese, yellow mustard, and 1/2 teaspoon of salt to the beef mixture. Stir until everything is well combined.
  4. Spread this mixture evenly across the bottom of the skillet.
  5. Sprinkle the chopped pickles evenly over the beef layer.
  6. Arrange the frozen tater tots in a single layer over the beef and pickles. Sprinkle the top evenly with the toasted sesame seeds and the remaining 1/4 teaspoon of salt.
  7. Bake in the preheated oven for 30 to21535 minutes, or until the tater tots are crisp and the casserole is hot and bubbly.
  8. Remove from the oven. Top evenly with the chopped iceberg lettuce, drizzle with extra Thousand Island dressing, and garnish with additional whole pickle chips. Serve hot.
