- 1 medium onion (peeled and diced)
- 2 tablespoons minced garlic
- 2 medium ripe tomatoes (diced)
- 3 tablespoons chili powder
- 1 teaspoon ground oregano
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 (16 oz) can chili beans (do not drain)
- 1 (16 oz) can dark red kidney beans (drained)
- 1 (16 oz) can garbanzo beans (chickpeas, drained)
- 1 (14 oz) can chicken broth
- 2 tablespoons olive oil
- 1 pound ground hamburger meat (do not drain)
Instructions
- Prep ingredients – Peel and dice the onion. Mince the garlic or use pre-minced garlic. Dice the tomatoes.
- Sauté the onion – Heat a pan over medium-high heat. Add olive oil. Once shimmering, add the onion and sauté for 5 minutes, stirring occasionally.
- Add the garlic – Stir in the garlic and cook for 1 minute.
- Cook the beef – Add the ground beef. Break into small chunks and cook until no longer pink.
- Transfer everything to a medium saucepan.
- Add remaining ingredients to the saucepan.
- Stir well and bring to a boil.
- Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
- Remove lid and simmer for another 30 minutes.
- Adjust seasoning to taste, garnish, and serve hot.
Notes
- For larger beef chunks, leave some whole pieces before mincing halfway through cooking.
- Use a potato masher for finely minced meat.
- Add more chili powder if desired for extra flavor.
