Ingredients

  • 1 medium onion (peeled and diced)
  • 2 tablespoons minced garlic
  • 2 medium ripe tomatoes (diced)
  • 3 tablespoons chili powder
  • 1 teaspoon ground oregano
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 (16 oz) can chili beans (do not drain)
  • 1 (16 oz) can dark red kidney beans (drained)
  • 1 (16 oz) can garbanzo beans (chickpeas, drained)
  • 1 (14 oz) can chicken broth
  • 2 tablespoons olive oil
  • 1 pound ground hamburger meat (do not drain)

Instructions

  1. Prep ingredients – Peel and dice the onion. Mince the garlic or use pre-minced garlic. Dice the tomatoes.
  2. Sauté the onion – Heat a pan over medium-high heat. Add olive oil. Once shimmering, add the onion and sauté for 5 minutes, stirring occasionally.
  3. Add the garlic – Stir in the garlic and cook for 1 minute.
  4. Cook the beef – Add the ground beef. Break into small chunks and cook until no longer pink.
  5. Transfer everything to a medium saucepan.
  6. Add remaining ingredients to the saucepan.
  7. Stir well and bring to a boil.
  8. Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
  9. Remove lid and simmer for another 30 minutes.
  10. Adjust seasoning to taste, garnish, and serve hot.

Notes

  • For larger beef chunks, leave some whole pieces before mincing halfway through cooking.
  • Use a potato masher for finely minced meat.
  • Add more chili powder if desired for extra flavor.
