- 1 pound Ground Beef 90/10
- 1 Red Bell Pepper
- 1 cup white rice
- 2 tbsp Taco Seasoning
- 1 can Black Beans (15 oz)
- 2 cups Chicken Broth
- 1 cup Colby Jack Cheese
- 1/2 cup Queso Fresco (topping)
Instructions
- Add your ground beef to a large skillet over medium heat and break it up with a spatula.
- Once the beef is broken up, add chopped bell peppers and cook for 3 minutes or until beef is no longer pink.
- Add rice, taco seasoning, black beans, and chicken broth. Stir, reduce heat to low, and cover with a lid.
- Cook for 15 minutes or until rice is soft and tender.
- Remove the lid, stir, top with cheese, and serve immediately.
Notes
- Drain excess fat from beef before adding other ingredients to prevent sogginess.
- Use freshly grated cheese for better melting.
- Store leftovers in an airtight container for up to 3 days.
