  • ½ cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 large egg, room temperature
  • ⅓ cup white granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup full-fat sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup powdered sugar, sifted (for glaze)
  • 1 teaspoon vanilla extract (for glaze)
  • 3 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. Mix apples, brown sugar, cinnamon, and ginger in a bowl. Set aside.
  3. In another bowl, whisk egg, granulated sugar, oil, sour cream, and vanilla.
  4. In a separate bowl, whisk flour, baking soda, and salt. Add to wet ingredients until just combined.
  5. Fold in ¾ of the apple mixture, then pour batter into the pan.
  6. Top with remaining apples and bake 50-55 minutes, or until internal temperature reaches 200°F.
  7. Let cool in pan for at least 30 minutes.
  8. For the glaze, whisk powdered sugar, vanilla, and milk until smooth. Pour over bread before serving.
