- 2 medium baking apples, peeled and chopped
- ½ cup light brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 large egg, room temperature
- ⅓ cup white granulated sugar
- ¼ cup vegetable oil
- ¼ cup full-fat sour cream, room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup powdered sugar, sifted (for glaze)
- 1 teaspoon vanilla extract (for glaze)
- 3 tablespoons milk (for glaze)
Instructions
- Preheat oven to 350°F. Grease a loaf pan.
- Mix apples, brown sugar, cinnamon, and ginger in a bowl. Set aside.
- In another bowl, whisk egg, granulated sugar, oil, sour cream, and vanilla.
- In a separate bowl, whisk flour, baking soda, and salt. Add to wet ingredients until just combined.
- Fold in ¾ of the apple mixture, then pour batter into the pan.
- Top with remaining apples and bake 50-55 minutes, or until internal temperature reaches 200°F.
- Let cool in pan for at least 30 minutes.
- For the glaze, whisk powdered sugar, vanilla, and milk until smooth. Pour over bread before serving.
Notes
- Let the bread cool completely before glazing for best results.
- Store leftovers in an airtight container for up to 3 days.
- Use full-fat sour cream for a richer texture.
