Delicious apple cinnamon crumble bars with a buttery oat topping.

  • Total Time: 65 minutes
  • Yield: 12 bars 1x

Ingredients

Scale
  • 2 tablespoons salted butter
  • 8 cups peeled and sliced apples (about 8 medium-sized apples)
  • ¼ cup cold water
  • 1 tablespoon cornstarch
  • ¼ cup light brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon kosher salt
  • 2 ¼ cups all-purpose flour
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 ½ cups rolled oats
  • ½ teaspoon kosher salt
  • 2 sticks (1 cup) salted butter (chilled or frozen)
  • Vanilla ice cream (optional, for serving)

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13-inch baking pan.
  2. Melt butter in a large sauté pan over medium heat. Add apples and stir to coat.
  3. Mix water and cornstarch in a small bowl. Stir slurry, brown sugar, cinnamon, nutmeg, and salt into apples. Reduce heat and cook for 5-7 minutes until softened. Remove from heat.
  4. Whisk flour, brown sugar, granulated sugar, oats, and salt in a large bowl.
  5. Grate frozen butter into the flour mixture. Combine until crumbly.
  6. Press half the crumb mixture into the pan. Layer apples on top, then sprinkle remaining crumbs and press lightly.
  7. Bake for 30 minutes. Increase oven to 425°F and bake for another 15 minutes until golden brown.
  8. Cool before cutting. Serve with vanilla ice cream if desired.

Notes

  • Use firm apples like Granny Smith or Honeycrisp.
  • Chill the butter for a crispier crust.
  • Store in an airtight container for up to 3 days or freeze for longer storage.
