  • 2 cups old fashioned rolled oats
  • 1 cup whole wheat flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 1 ½ cups milk (unsweetened vanilla almond or any kind)
  • 3 tablespoons honey
  • 2 tablespoons peanut butter (creamy or crunchy)
  • ½ cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 medium banana, quartered and diced

Instructions

  1. Preheat oven to 375°F. Lightly coat an 8×8 inch square pan with cooking spray.
  2. In a medium bowl, stir together oats, flour, cinnamon, baking powder, and salt.
  3. In a separate large bowl, combine milk, applesauce, egg, honey, peanut butter, and vanilla.
  4. Pour dry ingredients into wet mixture and stir until combined.
  5. Fold in diced banana, then pour into the prepared baking pan.
  6. Bake for 35 minutes or until golden and a toothpick inserted comes out clean.
  7. Cool, cut into bars, and serve.
