Ingredients

2 large eggs

3 tablespoons flour

½ teaspoon salt

½ teaspoon black pepper

¾ cup panko breadcrumbs

¼ cup grated parmesan cheese

1 large zucchini (sliced ⅓-inch thick)

Instructions

1. Whisk eggs, flour, salt, and pepper in a shallow bowl.

2. Mix breadcrumbs and parmesan in another bowl.

3. Dip zucchini slices in egg mixture, then coat with breadcrumb mix.

4. Preheat air fryer to 400°F and arrange zucchini in a single layer.

5. Spray lightly with oil and cook 5–7 minutes, flip, spray, and cook another 5–7 minutes until golden.

6. Repeat with remaining slices and serve immediately.

Notes

Eat fresh for best crispiness.

To re-crisp, air fry at 375°F for 3–4 minutes.

Serve with marinara, ranch, or pesto.
